Our motto is “More Than Water.” Wasser is German for water. Beer is 95% water. But it is more than that. We will make world class beer. But we want to do more than that. We will have a full service brew pub that serves artistic interpretations of food typically paired with beer. We will have over 100 seats with the vast majority of those being family dining.
Our menu on opening will feature sandwiches and small plates. We will have bratwurst, cheeseburger, and fish and chips on the menu. We will also have small plates. This will allow us to have rotating items that our diners can share and allows people to pick and choose multiple items. The small plates will include wings, roasted cauliflower, salads, and charcuterie boards.
We will focus on locally grown items and have options for children. My son, Leo, is not an adventurous eater. We will always have Leo’s Special on the menu. This will be a peanut butter and jelly sandwich or some other comfortable choice for our young diners. For adventurous eaters, we will offer a variety of choices. Initially we will have limited choices to focus on efficiency and a high level of service.
Rather than have a menu that is several pages, we will offer different choices during the different seasons and we will offer special pairings menus. On holidays and when we release a new beer, we will have special dinners where the food is matched with the beer. For St. Patrick’s Day, we will offer stews and corned beef. During Oktoberfest we will have various German choices. We want our menu to be fun and to offer a variety of interesting and unique options.
When you make beer from scratch, you want to focus on the flavors of the beer. You realize people prefer different flavors and you want to provide a range of flavors so everyone finds something they like rather than a boring choice that isn’t offensive to anyone. This is the same theory we apply to food. We want to offer many different flavors. There will be different choices at different times. We want to offer food we are proud of making that is artistic and interesting. Oh, and we want to have something the kids will eat.
